- 1 small onion , chopped
- 2 cups sliced mushrooms
- 1/4 cup butter
- 1/4 cup flour
- 4 cups chicken broth
- 1 cup pumpkin puree
- 1 cup light cream
- 2 tbsp honey
- 1 tsp nutmeg
Instructions:
Put butter in a large pot and melt on medium heat.
- Add onions and mushrooms. Continue to cook until onions are transparent.
- Add flour and stir.
- In a separate bowl combine chicken broth and pumpkin together. Use a whisk to make it smooth.
- Then, pour mixture in pot with the onion, mushroom mixture. Heat on medium for heated through.
- After heated then add the light cream.
- Add honey and nutmeg and stir and serve.
